Chocolate Chip Cookie Dough n' Oreo Brownies
Ingredients

½ cup semi-sweet chocolate chips

6 tablespoons unsalted butter

3 tablespoons unsweetened cocoa powder

2 large eggs, room temperature

¾ cup granulated sugar
-
¼ cup light brown sugar, packed

1½ teaspoons pure vanilla extract
-
½ teaspoon salt
-
¾ cup almond flour

16 grain-free chocolate sandwich cookies
Instructions

Preheat the oven to 350 F. Spray an 8-by-8-inch pan with cooking spray and line the base with parchment paper.

Press cookie dough into the base of the pan. Set aside.

In a microwave-safe bowl add chocolate chips and butter. Heat chocolate in 30-second increments, stirring between intervals until chocolate and butter have melted and are smooth.

Whisk in cocoa powder and set aside.

In another medium mixing bowl whisk together eggs, sugar, brown sugar, vanilla, and salt.

Whisk in melted chocolate mixture, followed by the almond flour.

Place as many chocolate sandwich cookies that will fit in a single layer on top of the cookie dough.

Pour the brownie batter on top of the cookie layer.

Bake until the top is glossy and a toothpick inserted in the center comes out clean, 35-40 minutes. Let cool to room temperature before slicing and serving.
