Chocolate Chip Cookie Dough n' Oreo Brownies

Ingredients

  • 2 packages Cappello’s Chocolate Chip Cookie Dough

  • ½ cup semi-sweet chocolate chips

  • 6 tablespoons unsalted butter

  • 3 tablespoons unsweetened cocoa powder 

  • 2 large eggs, room temperature 

  • ¾ cup granulated sugar 

  • ¼ cup light brown sugar, packed

  • 1½ teaspoons pure vanilla extract 

  • ½ teaspoon salt 

  • ¾ cup almond flour 

  • 16 grain-free chocolate sandwich cookies 

Instructions

  • Preheat the oven to 350 F. Spray an 8-by-8-inch pan with cooking spray and line the base with parchment paper.

  • Press cookie dough into the base of the pan. Set aside. 

  • In a microwave-safe bowl add chocolate chips and butter. Heat chocolate in 30-second increments, stirring between intervals until chocolate and butter have melted and are smooth. 

  • Whisk in cocoa powder and set aside. 

  • In another medium mixing bowl whisk together eggs, sugar, brown sugar, vanilla, and salt. 

  • Whisk in melted chocolate mixture, followed by the almond flour. 

  • Place as many chocolate sandwich cookies that will fit in a single layer on top of the cookie dough.

  • Pour the brownie batter on top of the cookie layer. 

  • Bake until the top is glossy and a toothpick inserted in the center comes out clean, 35-40 minutes. Let cool to room temperature before slicing and serving.
