St. Patty's Day Fettuccine with Cilantro Pesto

Ingredients

  • 1 package Cappello's Fettuccine
  • Organic Chicken, cooked
  • Pesto:
  • 4 cloves garlic
  • 1/3 cup Brazil nuts
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 2 cups packed fresh cilantro
  • 4 tablespoons lemon juice
  • 2 tablespoons organic extra virgin olive oil
  • 2/3 cup flaxseed oil or avocado oil
  • Sea salt to taste 
  • Optional toppings - mini organic peppers/tomatoes, organic parmesan cheese, and roasted pine nuts.

Directions

  • Make pesto in blender or food processor. Boil Cappello's Fettuccine according to directions on back of box. Add pesto, chicken and toppings and Enjoy!
