St. Patty's Day Fettuccine with Cilantro Pesto

- 1 package Cappello's Fettuccine
- Organic Chicken, cooked
- 4 cloves garlic
- 1/3 cup Brazil nuts
- 1/3 cup sunflower seeds
- 1/3 cup pumpkin seeds
- 2 cups packed fresh cilantro
- 4 tablespoons lemon juice
- 2 tablespoons organic extra virgin olive oil
- 2/3 cup flaxseed oil or avocado oil
- Sea salt to taste
- Optional toppings - mini organic peppers/tomatoes, organic parmesan cheese, and roasted pine nuts.
- Make pesto in blender or food processor. Boil Cappello's Fettuccine according to directions on back of box. Add pesto, chicken and toppings and Enjoy!
