Are your products fresh?

We make our products fresh and then freeze them to ship.

Are your products gluten free?

All of our products are gluten free!

Are your products grain free?

Yes, we use almond flour as our base ingredient and no grains are used.

Where can I buy your products?

You can order Cappello’s products right here on our website. Find a location near you that carries our product on the Where to Buy page. This does not list what specific products each location carries (as they do not share that information with us), so we always recommend calling ahead to make sure they have what you want in stock.

Is there an item minimum to place an order?

Yes, there is a 4 item minimum in order to place an order.  If you purchace 8 or more items, shipping is complimentary!

Shipping Information.

All packages are shipped through FedEx Ground with enough dry ice to compensate for the time in transit. 

*Overnight shipping may be affected due to inclement weather. Please consider the weather in your area.*

How long do your products take to cook?

All products can be cooked directly from Freezer. Our fettuccine cooks al dente in JUST 90 seconds. The gnocchi will float to the top of your rolling boil when done. For lasagna sheets, simply thaw and bake with your creation.

Are your products vegan?

Our cookie dough is vegan, YAY!

Can I freeze the product?

Yes. We recommend that you keep all our products in the freezer.

How many servings are suggested per package of fettuccine?

The nutrition facts are based on FDA calorie recommendations, while our suggestive copy that there are two large servings is based more on a meal built completely on pasta (rather than having it as a side, which the 4.5 reflects more accurately - just as how a regular box of pasta may contain 8 servings, but most often is prepared as a larger serving.)

What are the cooking instructions? 

Fettuccine

From fresh or frozen, add fettuccine to 3-4 quarts of boiling water (a roaring boil). Stir to separate. Fettuccine will cook, al dente, in approximately 90 seconds. If a less al dente bite is desired, cook longer. Note: This pasta can easily be overcooked if not tended. Top with your favorite sauce, serve immediately and enjoy. Serves two to three people or one really hungry T-Rex.

 

Gnocchi

From fresh or frozen, add gnocchi to 3-4 quarts of boiling water. Gnocchi like to have a lot of water to bounce around in - avoid cooking multiple packs in one pot. Stir immediately and every 30 seconds until gnocchi float. When gnocchi float, they’re done (approximately 1-3 minutes). Note: This pasta can easily be overcooked if not tended. For a firmer texture, lightly sauté the drained gnocchi in butter or oil and then add sauce if desired. Serve immediately and enjoy. Serves two to three people or one really hungry T-Rex.

 

Lasagna

No precooking is necessary, just thaw in the fridge before use. Create, bake and revel in the glory of fresh, gourmet pasta. Use in your own recipe or follow one of our favorites on the side of this box. Makes a three-layer lasagna in an 8x8-inch pan.

 

12 oz. Cookies

Thaw cookie dough in fridge or on countertop until it's soft enough to slice. Preheat oven to 350°. Remove packaging and slice into 1/2" thick discs. On a parchment-lined baking sheet place cookies 1/2" apart. Bake for 10 minutes, let cool and enjoy. MAKES 13 COOKIES.

 

All Pizza:

BAKING INSTRUCTIONS:
Preheat oven to 425. Place baking sheet on the bottom rack while oven preheats. (This ensures a crispy crust.) Remove pizza from the plastic and cardboard tray. Place frozen pie directly on the preheated baking sheet. Cook for 13-18 minutes, or longer for a crispier crust. (Baking times and temperatures vary.)

GRILLING INSTRUCTIONS:
13-18 minutes on medium heat, directly on the grill.
