Butternut Squash Ravioli with Spicy Italian Turkey Sausage, Apple, Parsnip

Ingredients

  • 1 box Cappello’s Butternut Squash Ravioli

  • 1 tablespoon olive oil

  • ½ small apple, thinly sliced

  • 3 small parsnips, thinly sliced

  • ¼ teaspoon cinnamon

  • ¼ teaspoon smoked paprika

  • ¼ teaspoon kosher salt

  • 1/8 teaspoon freshly ground black pepper

  • 2 cooked spicy Italian sausage links, sliced

  • ¼ cup chicken broth

  • 2 teaspoons fresh thyme leaves

  • Red pepper flakes (optional)

Instructions

  • Cook ravioli according to package directions.

  • In a large non-stick skillet over medium-high heat, heat the olive oil. Add the apples, parsnips, cinnamon, smoked paprika, salt and pepper, and sauté for 4-5 minutes. Add the sausage and cook 2-3 minutes more. 

  • Gently stir chicken broth into the skillet and remove from heat. Drain ravioli and add to the skillet. Sprinkle with thyme and red pepper flakes and serve immediately.
