Radicchio Grilled Salad Pizza


  • 1 Cappello’s Margherita Pizza 

  • 2 tablespoons finely grated parmesan cheese 

  • 2 tablespoons olive oil

  • 1 clove garlic, minced

  • 2 teaspoons red wine vinegar

  • 2 teaspoons mayonnaise

  • ½ teaspoon freshly ground pepper

  • ¼ teaspoon anchovy paste

  • 1 small head radicchio, roughly chopped 


  • Preheat oven to 425 F. Place a baking sheet on the middle rack while the oven preheats. 

  • Place pizza directly on the preheated baking sheet. Cook for 14-18 minutes, or until the crust begins to brown.

  • (Alternatively, if you want to grill the pizza, simply heat the grill to medium, place pizza directly on the grill, and cook for 11-13 minutes, or until the crust begins to brown and cheese has melted). 

  • While the pizza is baking, make the radicchio salad: To a medium mixing bowl add parmesan, olive oil, garlic, vinegar, mayonnaise, black pepper and anchovy paste. 

  • Whisk until smooth. 

  • Add chopped radicchio to bowl. Toss to coat. 

  • Once done, top pizza with salad. Serve immediately.
