Thai Peanut Noodles

Ingredients

  • Noodles:
  • 1 package Cappello’s Fettuccine
  • 1 ½ cups sliced red bell pepper
  • 1 ½ cups sugar snap peas or edamame
  • ¼ cup cilantro
  • ¼ cup green onions
  • 1 cup shredded purple cabbage
  • Lime wedges (to garnish)
  • Chopped peanuts (to garnish)
  • Fresh cilantro (to garnish)
  • Peanut Sauce:
  • ½ cup organic peanut butter
  • 2 tablespoons tamari
  • 1 ½ tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  • 2 teaspoons fresh grated ginger
  • 2 garlic cloves
  • ¼ cup warm water

Instructions

  • To make the sauce, combine all sauce ingredients in a blender or food processor, and blend until smooth. Set aside.
  • Cook fettuccine according to package directions. Drain and transfer to a large bowl with remaining ingredients. Pour peanut sauce over the noodles and toss to coat. Serve warm or cold garnished with chopped peanuts, cilantro, and a lime wedge.
