Thai Peanut Noodles
Ingredients
- Noodles:
- 1 package Cappello’s Fettuccine
- 1 ½ cups sliced red bell pepper
- 1 ½ cups sugar snap peas or edamame
- ¼ cup cilantro
- ¼ cup green onions
- 1 cup shredded purple cabbage
- Lime wedges (to garnish)
- Chopped peanuts (to garnish)
- Fresh cilantro (to garnish)
- Peanut Sauce:
- ½ cup organic peanut butter
- 2 tablespoons tamari
- 1 ½ tablespoons honey
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon chili garlic sauce
- 2 teaspoons fresh grated ginger
- 2 garlic cloves
- ¼ cup warm water
Instructions
- To make the sauce, combine all sauce ingredients in a blender or food processor, and blend until smooth. Set aside.
- Cook fettuccine according to package directions. Drain and transfer to a large bowl with remaining ingredients. Pour peanut sauce over the noodles and toss to coat. Serve warm or cold garnished with chopped peanuts, cilantro, and a lime wedge.
